Setting up the new workshop

setting up the gemini chocolate workshopThis time last year we moved Gemini Chocolate to London. This was a huge step for us! It was no longer possible to continue making our chocolate from Sam’s home kitchen; we needed somewhere purposefully setup to produce the best quality vegan chocolate in a focussed and dedicated environment.

After a lot of searching around different sized (and priced) units, we landed on something really special. Set in leafy Dulwich, just behind the beautiful West Norwood Cemetery, Parkhall Business Centre had exactly what we needed and quickly became home from home for Sam.

Along with the move we also invested in new pieces of equipment such as a grinding machine, climate controlled refrigerator and a state-of-the-art tempering machine from Milan, to name a few. However, it being in London meant space was quickly becoming our biggest problem. Along with storage, this new gear just simply wouldn’t all fit in.

Our solution was to think vertically! We had commissioned by National Theatre set builder and carpenter Jonny Emery an enormous, custom built, 3.5m tall storage shelf that could house the majority of our lighter goods and equipment, leaving the rest of the floorspace solely for our exciting new toys.
